About the Chef
Jacob Waterman is a highly qualified and award winning Bartender, Waiter and Chef, with over a decade of experience in the hospitality industry. He has travelled New Zealand, Australia and London to gain a full experience in all facets of the hotel industry. His latest endeavour, Impressions, stems from his concerns that people have surrendered control of their eating and health.

"There are whole generations who are putting day to day cooking in the too hard basket. Years of tradition and cooking skills are dying with them and so is the appreciation of these things. We are burning the bridge between us and the foods that are best for us, which come without labels or instructions."

cooking Jacob teaches with a great deal of enthusiasm and passion for fine food and wine. "I won’t rest at teaching a man to fish, I want him to be able to make it delicious and win hearts in presenting it.”
Jacob completed a Diploma in Culinary Arts in 2001 as the top student of his class. The same year he completed the New Zealand National Certificate in Patisserie.

In national competitions, a year prior, Jacob was runner-up to the junior Waiter of the Year. His resume also includes certificates and awards in wine service and cocktail making.

In more recent times he has cooked for many celebrities, members of Australian Parliament and served Paella to the Spanish Armada.
