In better news, my father recently visited and I thoroughly enjoyed showing him around the beautiful city of Adelaide and the bountiful hills region. We had several trips to the markets to collect some fresh items for the evening’s meals and matched them with several of our newly acquired hills wines. We really are so lucky here in South Australia it’s easy to forget that our reservoirs are still at their lowest levels ever, which brings me to this months tips:
1.Keep doing your part for water conservation, a week of rain doesn’t end a drought.
2. Stock up on last years vintage because this years wines are set to reflect the increased production costs!
3. Get out and make the most of this wonderful region! Head to McLaren Vale this Queens birthday weekend for the Sea and Vines Festival. |

I love chestnuts, they’re so versatile, yet great on their own. I used them in place of bread in stuffing, in place of nuts in baking or for texture in risottos and salads.
When choosing Chestnuts pick glossy and plump nuts that feel heavy for their size. Fresh nuts won’t dent when you squeeze them. Make sure they’re free of splits and mould.
To peel them, either boil for a few minutes or score the shell with a sharp knife and bake for ten minutes or until they smell nutty. Shell and peel when cool and use the same day.
Chestnuts dry out at room temperature, especially in a heated home, but they will keep for a couple of weeks in the fridge. Place in an airtight container or bag to maintain humidity.
